Training a bird dog

hey my dog is 7 Mos and just got over a bout of panosteitis( look it up if you want)
my question is whats the best way to train him i had him doing retreives on dummies with duck/ pheasant wings and hes been on tennis balls with pheasant scent on them
when and how should i introduce live birds?
he isnt gun shy, and is a yellow lab. anytips?
he also sometimes runs around wildly which i suspect is due to being crated with minimal excersice(vets orders) for the past month til he got over the panosteitis, as he never really did before how can i break this and make him come the first time like he used to and hand deliver birds before the Pano withought the use of a shock collar as there pretty expensive and im 20 and cant really afford a couple hundred dollars for the ones on cabelas?
