It's hard to beat my faithful, sharp as a razor, Case Trapper!
Knowing where all the joints are makes things alot easier.
I use my little Case for cleaning anything from Squirrels to Deer........

A sharp knife.  I have a knife or two that PF gave me as part of my membership package.  Either of those works fine.

Same knife I use to de-bone a deer, a 6" Victorinox boning knife.  If I'm in the field and a good ways from home and need to dress a bird I use a Havalon Piranta...

I use a Case SodbusterJr. that's  scary sharp and doesn't weight anything.

I usually carry an old Schrade liner lock that I bought back in the 80's. It's cleaned a lot of game and fish over the years.

My all-around favorite is the Kershaw Blade Trader. I keep one in my Turkey vest, my Deer hunting pack, and my Fishing kit at all times. Great, versatile knife!

a very old,very sharp Marks Edge german fixed blade that my dad gave me many moons ago.it just stays sharp and is the perfect size.

I use a Buck-Lite #422 that I've carried in my vest or hunting pack since 1985.  It has been a good one.
