Does the sound vary much between different makers in the same wood in a 1 piece? I know the weight of the peg will vary, will that make much of a difference? I need to buy some. I noticed the prices will vary quite a bit with some makers.

In my experience they can be different. Thickness & weight can change the harmonics. I've had real good luck with Larry Gresser's strikers. Bill Lyman makes a good striker as does Fred Cox. I can compare my Gresser tulipwood to a friend's Cox tulipwood & there is a slight difference.
