After a couple of heavy rains, our New Mexico foothills are covered with this wild edible succulent.  My wife recognized it as something we had eaten in a restaurant once.  She was right, it's wild purslane, also known as portulaca or verdolagas.  It is tasty, super nutritious, and free by the sack full.  Anyone else eat this stuff? How do you prepare it?

I just killed a bunch of it. Didn't know it was edible table fare. This could be an interesting thread.
May I assume you're not here to inquire about the alcohol or the tobacco?

My garden is full of it. Un wanted. i hear horses like eating it. Lots of recipes on Google.

I hoe it up and toss it over the garden fence.

I'm sure I've weeded it out of the garden or lawn before and chucked it, but we had it in a salad the other night and I was surprised how good it was.
