What's the best choke and ammo combo to use with it?

675 The HV13 7s work well.  The Long Beard will work well also. 
Tell us just how dead do you want them to be and we will see if we can get that for you.

They aren't picky. Any quality choke around .675-.680 will do all you need it to with the right ammo

There are many good chokes and ammo choices for your 835 as has been said. In my work for 2 articles in which I shot 6 guns and 32 different chokes for a total of 196 shells, both WLB #6 shot and Hevi-13 #6 shot, the Hevi-Shot choke .676 and the SSX  .670 put more numbers in the 10" circle and had more even patterns, with no 2" or larger gaps, than the others.

What I have found over the years is that it's very important to start out with a very clean bore in the 835. That's the reason I recommend that you "deep clean" it. http://allaboutshooting.com/blogs/blog/98772615-deep-cleaning-a-shotgun-barrel

As most have said, the 835 likes any choke in the .670-.680 range.  Some are Pure Gold, Stardot, SSX, Hevi, Sumtoy and Indian Creek to name a few.  If you want to shoot Hevi-13 then any of these chokes with #6 or 7's is a great place to start.  If you prefer lead then the Winchester Longbeards in #5 or 6's with any of these chokes will do a great job for you.  I shoot a PG .670 with Hevi 7's with great results.  As most have said also, there are many Great Combos with the 835 or 935.  Check out some of the Mossy 835 patterns in the Mossberg pattern Pics and see what you like.

I got mine in the early 90s I think. I was just taking a couple "make sure" shots w an SP10. The bolt broke so I went to buy another. The store had none n the guy talked me into a 835. Didn't need it as I had others but it came home.
At the time basically federal, Winchester, Remington were about the only companies offering turkey loads. Least that's how it seemed. There was no OG so we were on our own I guess.
I went to the range w all three companies shot in 4,5 and 6.
The gun liked the XX supreme the best n seemed to throw 4s as well as the rest so that's what I opted for.
I still have the remaining loads from the boxes. Anyway I used that same shell even last year w only one bird being taken in between w longbeards.
I've patterned it recently n of all the turkey loads it still likes that load best n actually patterned very similar to the 10 ga. Guess that's why I never used the 10 again. No sense carrying that behemoth when the ulti mag was so much lighter.
I have friends who've had great luck w hevi shot and none of the guns had anything but the factory choke. All could perform well at 40 yards n all had decently forgive able patterns up closer.
Great gun that patterns well it seems w many loads though.
I can honestly say imo one if not the easiest to use/pattern gun is the 835. No tricks required least in the older ones

I got a Star Dot choke coming for it. Have never tried the hevi shot but looks like I will pick up a box of them as well

Stardot and Hevi 7's are BAD medicine for turkeys out of the 835.  Longbeard 5's or 6's should work well also.
