Great idea.  870's are great turkey getters.  Deep clean the barrel and get a choke in the .665 range.  Check the POA/POI with dove loads at 15-20 yards and correct if necessary.  LB #5 or 6's in 3 or 3 1/2" should be a deadly combo with a .665 choke.  SSX, Sumtoy or IC are excellent choke choices.

I am using a Hevi Shot .662 choke with Long Beard XR 3" #6.

I am thinking of getting a camo pistol grip stock and camo fore end like this one:

The Hevi choke is another good choke as well.  What kind of pattern are you getting with the LB 6's?  As far as the stock replacement, that is up to you.  A black stock will be just fine.  Camo not required.  What is required is very, very limited movement when Ole Three Toes gets into view.

I had the 870 Express with the stock and forearm like you have pictured.  I really did not like it all that much and went back to a normal stocked gun.

Hit a pawnshop a Remington or mossberg can be had for less then that then you have money for choke and shells that's what I did when I bought my first turkey only gun

In fact it was it was a 21 inch barreled 870 with 3inch chamber gave 300 for it. Would still have it had it not been stolen check out a few pawn shops and used gun racks heck store here in nc has a super mag with 28 inch barrel for 350
