Canning Turkey?

I'm canning turkey today.  Legs and thighs only.  I pressure cook at 15lbs, for 15 minutes.  Debone and de tennon, pull meat apart, and put in jars, and then can it.  It's awesome!  Breast gets boned out and frozen for later on the grille.  Just was wondering what most of you guys do with your dark meat?

I always cook mine in a croc pot for about 8 hours. Usually throw it in there with some cream of mushroom soup and serve it over egg noodles.

Cook in crock pot until meat will pull, then add in favorite bbq sauce and simmer in sauce.  Use as primary meat for a meal or make sandwiches.  Very similar to pulled pork but less greasy.

ya really aught to try canning it.  It is, just like pulled pork.  We use it a lot in stir fry, soups, and bbq.  Good stuff!
We can a lot of Venison also.

Ground up.  I breast them out, then pick everything I can off the bird from the dark meat to the leftovers on the back and wings.  I can get around 3 pounds of ground meat off a 20+ pound bird.

That's really different!  Never thought of, or heard of anyone doing that.  Makes sense.  You can buy ground turkey at the store, so why not.

Dark meat is cooked in a pressure cooker, de-boned and made into a turkey hash or either a soup with celery, heavy cream, rice, and whatever the wife uses. Both are excellent dishes . The breast is always fried and a treat for the kids and company.

One of my favorites is fried breast, wild and white rice, biscuits, home made gravy, and string beans.

I grind the dark meat 3:1 with fatty bacon and make burgers for the grill.  The pork fat is a good binder and I like the smokiness from the bacon.  Chill the meat and bacon almost to the freezing point before grinding. Sometimes I mix in some green chili.  A big favorite with the family.
