Try this for a little Caribbean twist on the grill.

This makes enough marinade for one boneless half of a wild turkey breast.

1 TBS Kosher Salt
1 TBS Garlic Salt
1 TBS Thyme
2 TBS Whole All Spice

2 Fresh Cubanelle Peppers or 6 Annaheim Peppers (remove stems and seeds)
1 Habanero Pepper (remove stem and seeds)

1/4 cup Peanut Oil

Thoroughly liquefy all ingredients in a blender.

Dry the turkey breast thoroughly with paper towels.  (Helps it soak in the marinade and seasoning stick while cooking)

Put the turkey breast and marinade in a large ziploc bag.  Shake it up to make sure the meat gets coated.

Refrigerate in marinade at least two hours before cooking.  (Overnight is better!)

Grill the breast until done.  The seasoning should stick and blacken while grilling.

Looks mmmm good!
And I'm looking for a recipe to try next few days. My last cook was to brine and carefully smoke to temp so not to  overcook.  Frying is good but looking for other options, may go Jamaican on dis one mon!

I'm running the left 2 burners on medium or slightly lower, leaving the top open. I keep the tip just off the direct heat as it will over cook and be dry. 15 minutes on each side and I then wrap it in aluminum foil to rest (10-15 minutes) while getting any sides finished. Blackened on the outside and moist and juicy in the center.

This is my go to recipe for turkey since it was posted years ago.  In my mind nothing compares, this is the best way to cook a breast.  I put a thermometer in mine and pull it the min it hits 160 but let it rest 5min before slicing.  I cook on a propane grill on high to char the outside up a bit and its always moist and flavorful.
