I suspect from the bird's perspective what really matters is breaking up your outline so likely nearly any camo will do.  When I started hunting turkeys up here in MN spring/green colored camo patterns were non existant so I used fall patterns.  Of couse, I have turkey fever so I'm always buying new stuff.  These days it's Mossy Oak Obsession or Realtree APG as having more green in the mix looks more realistic to my eye.

I'm still wearing old school Realtree Xtra Brown. There have been advances in photorealism since it was in fashion, but it's still hard to beat because of its uneven pattern that breaks up your outline at a distance and is reasonably realistic up close.

California in April is a riot of greens, so of the more modern patterns I prefer MO Obsession.

I love mossy oak obsession after it greens up. Early season I most use realtree ap or xtra.
