Knife Sharpener Question

As I accumulate knives for hunting and butchery, I've come to the conclusion I need to learn the skill of sharpening! So I've been reading and watching videos and have a question about sharpeners and what I will need. I figured what better place to ask than this right?!

So I've got a double sided sharpener picked out but I'm just not sure what grit I really need. Do I want a medium/fine, medium/superfine, fine/superfine, course/fine??

I have a Spyderco that comes with a pair of graphite and ceramic rods in a case that has preset holes to maintain the rods at the correct angle. Will take care of a blade that has been dinged and with the ceramic will put a razor sharp edge on within a few strokes.

I use a kit very similar to he one I attached in the link below.  Maintains the correct angle on the edge since you clamp the knife, and you get to use the different grit stones included.  I do the dinner and kitchen knives, hunting knives, etc. and all hold their edge for a long time.

For years I went the route of using stones to sharpen my blades, good steel in a knife is hard to sharpen with a stone but maintains its edge longer.  Between my hunting knives, kitchen knives and friends knives I could never get caught up.
    Then I got smart, I purchased a Chefs Choice electric knife sharpener, works great on the best of steel and does not mar the knifes finish.  I do one extra thing, when I am finished sharpening my knife I use a steel and run the knife over it a few times.  Makes the knife have a razor finish.
    Now I spend more time hunting than sharpening knives.
Also there is no heat build up while you sharpen you knife so you don't have to worry about heat damaging your blade.

Here's my 2 cents. Been a chef for 20 years. Best edge your going to get is on  water stones. I own a 600, 1000, 3000 and 6000. Some knives you don't want to sharp.  Chopping. I only use the 3000 and 6000 with sushi knives. Regular knives French, boning, I go up to 1000. IMO I prefer to skin animals with a havalon.   On a regular knife using a 22,23 degree angle is good for knives. My sushi knife is more like 90° 0n one side and 5-10° on the other. I can shave with it. An eclectic sharpener is good as well. Depends how much you get into it. Good luck.

I have done it all and still have most of the sharpeners.  From Arkansas stone to full blown Tormek T7 setup with all available options (including Japanese waterstones) .Spyderco triangle, edge pro apex, fallkniven, DMT, you name it. 

This year I bought a product that simply works and works great.  I have not touched any of my sharpeners since.

Thanks for the replies. I've been eyeballing that Worksharp system. I like that it can do anything from scalpel blades to lawn mower blades.

What's the difference between the regular version and Ken Onion version??

For those of you who are using the Work Sharp tool can you shave hair off your arms?

Silly question I know.  I usually send my knifes out once a year for sharpening.  I have no use for a half sharp knife.  I want to shave my arm from a inch away and I don't want to spend much time sharpening it.  I recently bought this sharpener (link attached) $30.  I watched the youtube videos and read the reviews.  It looked really good so I tried it.  I figured I could not go wrong for $30.  It does work but not very good.

Yes, Worksharp will get a knife shaving sharp.
After I got mine, my wife said I looked like I had a disease I had so many bare patches.
