Glass- macassar ebony or tulipwood
Crystal- tulipwood, mac ebony, dymondwood
Ceramic- dymondwood and bloodwood
Copper- don't own one
Aluminum- on any aluminum surface dymondwood, dymalux, snakewood, and tulipwood

I'm partial to Chakte Viga and Yellowheart for a one piece, and Purpleheart and Maple top as a two piece.
Bloodwood, Osage, And Tulipwood will run all of those surfaces very well
Glass - Snakewood, Dymondwood, Purpleheart, Ipe
Crystal - same as glass
Ceramic - Ipe
Copper - haven't ran it in a while but I know Tulipwood was good on it
Aluminum - Raw and/or Anodized - Dymondwood, Yellowheart, Canarywood, Zebrawood (for more mellow sound)
Slate - Pacific Dogwood, Zebrawood, Purpleheart
Osage is also good overall striker like Chris O mentioned. Buying strikers is as addicting as buying calls for me.
Glass/Crystal- Dymondwood
Copper- Tulipwood
Anodized Aluminum- Persimmon/Canarywood
Slate- Hickory
Titanium- Pecan
You'd be hard pressed to find a surface that a quality Dymondwood won't run on at high level. As JBird mentioned, it is addicting. There's endless combinations of strikers you can match with your pots. I'm probably 3/1 strikers to pots haha.
