Rush Creek Guide Service in the TX panhandle. Lots of birds, great people, 4 bird limit, hunter friendly. Check out their website.
Kansas has enough walk-in areas and a long enough season that you might not want to lock yourself down to a certain date range with an outfitter. The weather can vary a LOT.

X2! this. We take a road trip up there every year and just follow the birds. Sometimes we spend a day, two days or how ever long it takes but we just go to where we find birds.
I went to Kansas last January to quail hunt and was amazed at all the walk-in areas....I plan on going back and trying my hand at turkey hunting and just access the walk-in areas.

Just keep in mind a very small percentage of those will be open for turkey hunting.
