Its that time for grilling and Vidalia Onions.
Start with a big ol Onion. Strip the outer layer and core a hole in the center, without poking through the bottom.....bascially turning the onion into a bowl. Rub it down with some olive oil and salt and pepper it. Take a beef boulion cube and place it in the bottom of the "core" that you created in the center of the onion. Next take a stick of salted butter and cut maybe about 1.5 inch thick piece.....put it in the core over the beef boulion cube. Wrap the onion in tin foil and place in on the top rack of the grill. Let it cook until tender. We like it when we grill steaks or with grilled chicken.
I also added a dash of red wine vinegar to this same recipe and it was pretty good too. Put it in the center with the butter and boulion.

This recipe has to be one of the best tasting and easy to make sides I have ever had. Chop these up and they can go on anything. Made them last nite for the first time. May have them again tonight.thanks savduk.

I grilled a tenderloin last night and I wish I had seen this before hand because it would have been great with that backstrap!

Im glad more of you guys are seing this. I love this one. I like to make an extra one so I can chop it up and mix it in with my hamburger meat.
You can slice up some zucchini and wrap it up with the onion. That's pretty dang good too
