Is there a way to know if a gobbler is on the ground gobbling with a hen versus if he is on the ground and just walking and gobbling without a hen?

Only if you have a visual.  Without a visual it's just speculation.

When they are a distance away I have a hard time telling if they are on the roost or on the ground

Jk, if it feels like they are intermittent pity gobbles I usually assume he's got company but if he's burning the woods down choking himself on gobbles I'll assume he's lonely
