Here is a very nice way to use up some of your ground venison (deer, elk, antelope, moose)

1 lb. ground venison
1 lb. pork sausage
2 eggs
finely chopped bread crumbs ( i use the progresso italian)
shredded cheese ( if you want cheesy stuffed meatballs use the cubes and roll the meat around them)

Start by putting the meat, eggs, and some crumbs, and cheese. Begin mixing you will need to add more crumbs and cheese until the mixture becomes very tacky but not dry.

If you want stuffed meatballs you can use cubed cheese and roll the meat around them.
I use these in my spaghetti sauce, i just drop them right into the sauce and let them cook in the sauce for about 4 hours.

You can cook them in any sauce that you want, just remember that you need to have them at an internal temp of at least 165 degrees
