 which load an which choke will give me 180- 200 in 10" circle with remington youth model 21" barreled 20 ga?

A few years ago the PG 555 and Nitro #7s would be my answer as you get around 200 with that combo. The duplex loads cut down on total number of shot to start with. Loads this year may be different from 2007 loads .

How many ounces of shot are in the Nitro 20ga straight 7's?

What kind of choke would i need if I wanted to get high #s with federal hw #7s?

I don't see consistently getting 180-200 with the Fed 7's out of that gun. Why would you want that high of a count anyway? You would have NO room for error with that. My 870 youth with a SumToy .562 shoots 130's with the Feds and 150's with Hevis. Both look good in the 20" circle and will kill at 45+.
